LAVA HOT SPRINGS — Coconut-crusted Hawaiian mahi mahi fish and chips and an unforgettable burger topped with beef, chicken, eggs and bacon are among the unique offerings at Rogue, a new American bistro that opened last week in downtown Lava.

Carol Cove owns the new restaurant at 222 Main St. with her boyfriend, Eric Partridge. They are open during the lunch and dinner hours.

The menu at Rogue offers several types of burgers and sandwiches. Each of these is served with hand cut fries.

They also have fish and chips on their menu made with coconut crusted Hawaiian mahi mahi.

“Our fish and chips are phenomenal,” Cove said. “They’re something new and interesting for the area.”

Rogue also serves a variety of beer, wine and crafted cocktails.

“We’re trying to keep a lot of local breweries and seasonal favorites on tap,” Cove added.

The community has responded positively to Rogue, with big crowds at both its soft opening and grand opening.

“We’ve had lots of positive feedback from both the community and tourists,” Cove said.

The most popular item on the menu so far is the Rogue Burger, which has a beef patty, grilled chicken breast, eggs and bacon served on a brioche roll. It is a dish that Partridge came up with.

“It has everything in the barnyard,” Cove said. “It’s become a fan favorite.”

Other popular dishes include Rogue’s chicken parmesan, which is served over bucatini pasta with a red wine inspired sauce.

“We have some great seasonal items we’re trying to rotate,” Cove added.

Cove and her boyfriend are originally from Boston. They enjoy being here in Lava because of the diverse community that exists. They hope to add to the diversity and uniqueness of Lava.

“It’s such a dynamic group of artistic and creative people offering something different,” Cove said. “We’re hoping to add something to give everyone a bit of variety.”
