POCATELLO — The Food Truck Round Up has returned to Lookout Point in downtown Pocatello, providing locals with delectable dishes from a wide assortment of cuisine curators.
Exotic Turkish breakfast fries, towering burgers with all the fixings, heaping smoked servings of barbecue meats and quesabirria tacos dipped in a simmering broth are only a small sample of the tasty food available on Mondays at the Food Truck Round up.
From 4-8 p.m. and running from April through September at Historic Downtown Pocatello’s Lookout Point, local residents can soak up the sun and tease their palates with a variety of indulgent delights offered by area food trucks.
With regional favorites that include Smokin’ Bud’s BBQ, Grandma’s Pantry, Los Tacotes, Wild Noodle BBQ, Lemon Smashers and numerous others, there is plenty of mouth-watering eats for all ages.
For newcomers like Tyler Despain and his food truck, Wild Noodle BBQ, the round up offers a unique opportunity for growth and recognition.

“As we are still in our first year running the food truck round up was an awesome addition to our weekly schedule and a great way for us to get our name out there,” Despain said. “It was also awesome to see the turn out that happened even on the first roundup. We are excited to see it grow even more as the summer approaches. The food truck round up is meaningful to us because we love to see this collection of small businesses collaborating to bring our community together in a positive way.”
Even for food truck mainstays like Ryan Bud’s Smokin’ Bud’s BBQ, who has been a core aspect of the round up for years, the weekly event is an essential part of his life.
“Most people hate Mondays for whatever reason, but I personally love them because of the round up,” Bud said. “Truly, I look forward to it all year long. Even in winter when I’m closed, I’m dreaming about the round up starting again. I get to see so many new and familiar faces every week. It’s so much fun for everyone. We have live music, a good variety of different trucks to try, and a beautiful new park at Lookout Point. It really is a community driven event. That’s why I love it so much, I love this city and the community we have. It’s very supportive of small businesses. Grab some friends, family or a date and come down to the round up. You won’t regret it.”

I, personally, would never eat anything from a food truck. Why? Because they have no tap running water. Yes it’s true that they all had been cleared by the State of Idaho “food safety”. But do you trust the Government is able to keep us safe? I do not think so. It is much harder to maintain a proper hygiene without a tap running water supply and a sewage drain present at any brick-and-mortar restaurant. Yes, it is true that the food might be not safe in a restaurant either. But once again, I would never venture to eat anything from a food truck. Period.
