I love all-in-one pan meals, and my cheesy chicken and broccoli casserole not only has chicken, rice and veggies all in one casserole, but clean up is a breeze because you only use one dish to make and bake the entire meal. Tender seasoned chicken, fluffy rice, and fresh broccoli are all baked in a creamy and flavorful sauce, then it’s topped with melted cheddar. This casserole can also be made and stored in the fridge until you’re ready to bake. It’s a hearty, homey and delicious meal the entire family will love.
Belle’s Cheesy Chicken and Broccoli Casserole
2 pounds boneless, skinless chicken breast or thighs
2 (10.5 ounce) cans (or 1 family-sized can) cream of chicken soup
1 ½ cups chicken broth
2 cups long-grain rice (I use jasmine rice)
½ teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
½ teaspoon Italian seasoning
3 cups broccoli florets
1 packet dry onion soup mix
2 cups shredded cheddar cheese
Grease or spray a 9-by-13-inch baking dish. Place the soup and broth in the dish and whisk together. Stir in the rice. Place the chicken on top (if using breasts, score the meat for even cooking). Sprinkle the chicken with salt, pepper, garlic powder and Italian seasoning. Place the broccoli evenly around the chicken and push it slightly into the soup mixture. Sprinkle the dry onion soup mix over everything. Cover the dish with foil and bake for 1 hour at 350 F. Remove from oven and uncover. Sprinkle the cheese over the top and bake for another 5 minutes or until the cheese is melted.
