BLACKFOOT — University of Idaho Cooperative Extension Educators from the Eastern District are offering a five-week course on the basics of food preservation. Participants will apply the skills they learn within class labs — canning, freezing, drying, etc. Classes will be held Wednesday mornings, 9 a.m. to noon starting March 6 at the Bingham County Extension/4-H Building, 583 W. Sexton St., Blackfoot.

Class topics and dates include:

March 6, Canning Basics

March 13, High-acid Foods 

March 20, Low-acid Foods

March 27, Freezing and Drying

April 3, Pickling and Preserves 

You may sign up for the whole course for $50 or choose one or more classes for $15 individual classes. The canning basics class — March 6 — is required to participate in individual classes. This class series will be held in Rigby starting March 5 and in Preston starting March 7.
