POCATELLO - Joe Fraser, operations partner at the new Ruby Tuesday restaurant, said the national chain has changed a lot in the past two and a half years.
Fraser discussed the changes to Ruby Tuesday's menu, which also led to an overall concept adjustment, outside the Pocatello restaurant, which opened Wednesday. It's located at 2365 Via Caporatti Drive, just off of East Center Street.
He said the biggest change to the menu is the use of fresh, quality meats that are not frozen.
"With a new menu in our restaurants, it only made sense to change the decor," Fraser said.
The Pocatello Ruby Tuesday will open at 4 p.m. daily and is serving dinner only for its first two weeks. By then Fraser hopes to be opening by 11 a.m. to serve lunch and dinner.
Wednesday's opening received a good response, he said.
"From 4 p.m. to 5 p.m. it was steady, but now it's full," Fraser said at about 7 p.m.
He said the restaurant also received a great response when looking for employees.
"We had almost 500 applications for 85 jobs," Fraser said.
