POCATELLO — This Thursday, lovers of fish tacos, good vibes, and technicolored hangouts are invited to attend Ketchum Burrito’s ribbon-cutting at 11 a.m. in celebration of its first year in Pocatello.

The burrito eatery, also known as KB’s, recently underwent renovations that included a new lounge area, charging stations and a salsa bar, all of which create a cozy, colorful atmosphere, says owner Rodolfo Serva.

“I would like everyone to join us and see the new facelift, the new cozy place, and just feel the energy here,” said Serva. “We’ve got a lot of love for everybody and would love to have people here. Everyone is very welcome.”

Plus, 15 percent of sales that day will go to the Idaho Foodbank, says Serva, who says he wants to give back to the community since it has always been a close-knit, helpful one.

“I love it and I love these people,” he said. “I fell in love with Pocatello because it’s a good community, everyone is together trying to help each other, and because we can trust each other.”

Serva owns and travels each month to the six KB’s locations scattered throughout Idaho, and is striving for consistency in each place. In all locations, KB’s is a colorful experience, and is commonly known for its Ketchum Burrito and its fish tacos made from Alaskan and ocean-caught seafood. None of it is farmed.

It has also received recognition at its Sun Valley location, having won multiple awards from the Idaho Mountain Express’s “Best of the Valley” series, which includes first place in both 2018’s Best “To-Go” Grub and 2018’s Best “Cheap Eats.”

“We are very popular in Sun Valley,” Serva said. “Everyone knows about KB’s there.”

The Pocatello location opened in January 2018, and has seen a great reception since then, says Serva. They’ve also started selling merchandise such as T-shirts and hats, and customers who snap pictures of themselves wearing KB’s attire at various places throughout the world can have the photo placed on KB’s wall and will receive a free burrito for participating.
