Belle’s Bacon Fat Chocolate Chip Cookies.

Some foods make a dish even better. For me, bacon is at the top of that list. I add it to all sorts of recipes, from casseroles to salads, to cookies. Yes, I said cookies. My chocolate chip bacon fat cookies use leftover bacon grease instead of butter or shortening. It may seem strange, but when my grandmother was young, nothing went to waste- including bacon grease. It was saved and used for a number of things, including baking. With these cookies, the bacon grease adds a hint of smoky similar to other sweet and savory dishes like chicken and waffles, candied nuts, or peanut butter and jelly. And they’re so easy to make. I use a cake mix, so there is almost no measuring and only a few ingredients. It’s a sweet treat that is one more reason to love bacon.

Belle’s Bacon Fat Chocolate Chip Cookies1 box yellow cake mix

1/3 cup bacon grease

2 eggs

1 cup chocolate chips

Mix together in a large bowl, the cake mix, bacon grease, and eggs. Fold in the chocolate chips. Using a tablespoon or small cookie scoop, place dough two inches apart on an ungreased cookie sheet. Bake at 350 degree for 10-12 minutes. Cool on wire racks.
