POCATELLO — A new ice cream shop has landed in the Gate City, offering new flavors every week and confections sure to tantalize taste buds.

The “Shark Tank”-backed Crispy Cones is the creation of Rexburg husband-and-wife duo Jeremy and Kaitlyn Carlson, who secured a $200,000 deal from investor Barbara Corcoran in Season 14 of the popular business reality TV series.

Since then, the franchise has expanded to more than 100 locations, including one in Idaho Falls last April. It held its grand opening in Pocatello on Friday.

Inspired by the “Shark Tank” episode and eager to open their own business, owners Karla and Moroni Corral and their daughter Demmi fell in love with the brand, opening franchises in Idaho Falls and Pocatello.

At Crispy Cones, it’s all about the handcrafted, Czech-inspired namesake cone. Made from scratch in front of customers, the dough is rolled onto dowels, left to proof and finished on a grill, then layered with sweet toppings.

“We have different kinds of spreads — Nutella, peanut butter, cookie butter, strawberry jam,” Karla Corral said. “We put whatever kind of spread they want. Then we put toppings at the bottom of the cone. We fill it up with ice cream to the top of the ring. We put more toppings in the middle, more ice cream on the top and more toppings and sauce at the end.”

Corral said the ice cream is unique and cannot be found anywhere else. The soft serve is about 10 percent butterfat, double the amount typically found in most fast food chains. That higher fat content makes Crispy Cones’ soft serve noticeably creamier and thicker.

The cones are fully customizable, with customers choosing their preferred cone, spread, ice cream, toppings and sauce.

Crispy Cones also features a weekly flavor — a new ice cream and cone combination that rotates regularly.

“Last week, we had ‘The Leprechaun,’” Corral said. “We had a cone that was covered with Fruity Pebbles and the ice cream was ‘cereal milk.’ Then we add Lucky Charms and raspberry sauce on top. This week we have the ‘Orange Creamsicle’ flavor. So it changes every week. That’s the fun part about it — people will not get bored of coming in and finding the same thing over and over again.”

Fan favorites on the menu include Brownie Royale, Cookie Alamode, Berry Cheesecake and Choco Berry.

“If they don’t like any of those combinations, people can customize their own cones by choosing one thing from each of the columns,” Corral said.

The dessert options extend beyond ice cream. Customers can also order hot fruit cones — filled with toppings like apple pie, crushed graham cracker and whipped cream — served without ice cream.

For those wanting their order to go, the shop offers ice cream cups and half-pints available while supplies last.

“We’ve seen that when the flavor of the week is over — or it’s about to be over — and they love that flavor, people will come in and buy those half-pints and keep them in their freezer,” Corral said.

Customers can also purchase Crispy Cones experience boxes, launched about two weeks ago. Each box includes cones loaded with custom spreads and toppings alongside four half-pints of ice cream of the customer’s choosing.

Dedicated customers can also use the Crispy Cones app, which features a rewards system. For every five cones purchased, customers earn a free cone — or they can save points to redeem branded merchandise such as T-shirts and sweatshirts. The app also allows guests to order ahead and skip long lines, a useful perk during peak hours.

While the new owners are still gauging the local market and may adjust hours in winter months, Corral noted that Idaho Falls customers keep coming back even in the coldest months — making customer demand the deciding factor.

“We want you to experience Crispy Cones,” Corral said. “Crispy Cones is a great brand. Lots of people are learning about it and loving it. Come and try it. It’s great ice cream, great cones. Everything is made with love. Here we train our employees really well. They’re still learning, be patient with them, but it’s a great hangout place for college students, for families, and it’s a great place to be at.”

Crispy Cones, located at 4100 Yellowstone Ave. Suite B in Pocatello, is open Monday through Thursday from noon to 11 p.m., Friday from 11:30 a.m. to midnight, Saturday from noon to midnight and Sunday from 1 to 10 p.m.
