CHUBBUCK — Area residents will soon be able to satisfy their food cravings at Patriot Square when the Chubbuck Food Truck Park opens April 3.

The new food truck park, located at 403 E. Chubbuck Road adjacent to Patriot Square, is owned by Camille Gilbert, best known for her food truck Camille’s Crepes.

Gilbert has owned her mobile eatery for 12 years. She decided to purchase property to build a micro food court and provide a space for food trucks and families to gather.

“We opened it last year in July and had mostly revolving food trucks,” Gilbert said. “Camille’s Crepes was there for the majority of it. We always do a big thing on Thursdays — the food truck fest — where we invite new and rotating trucks in. There’s a nice grassy area and a big tent to provide shade. We’ve got some tables there. The goal is to create a really cool community place to gather, to eat great food and have good conversations with good friends.”

The grand opening runs from 4 to 8 p.m. April 3 and from 9 a.m. to 1 p.m. April 4. The event will feature live music, performances, giveaways, lawn games, children’s activities and food from local trucks.

The food truck lineup includes Homefire Comfort Foods, Paikama, Tropical Snow, Camille’s Crepes, The Berry Cup, The Corndog Company, Sweet Carts, Wafflicious and Aguas Maria.

“Our hope is growth for the food trucks,” Gilbert said. “I feel like Chubbuck is a growing community and we want to be a part of that growth. If a husband and wife attend and one of them wants a crepe and one wants a barbecue burger, they can come to the food truck park together and both have what they’re looking for. It allows them to have a great place to sit and some fantastic music to listen to. Nothing beats an Idaho evening. We just want to take advantage of that.”

This year, Camille’s Crepes, The Corndog Company and Tropical Snow will be permanent fixtures at the location, open Monday through Saturday from 11 a.m. to 6 p.m. Food Truck Fest will be held every Thursday from 4 to 8 p.m. Gilbert said the goal is to have four to five food trucks on-site during operating hours, and she is encouraging other trucks to join.

“We’re specifically looking for Mexican food right now, but we’d love anybody who wants to come and start in on this chaos,” Gilbert said.

The food truck park also provides a space for newer trucks to grow. Wafflicious is originally from Grace but has new owners from Pocatello looking to tap into the local market. Aguas Maria has been based in Idaho Falls for three years but is also new to the area. For nearly all other vendors, this will be close to their first full year in business.

After its grand opening, the park will operate from April through late October.

“I think it’s important for people to understand that the people in these trucks are their people,” Gilbert said. “They are their neighbors, they are their friends. When you’re supporting one of these food trucks, you’re supporting a local family, a local friend. We want to see that growth happen and create an upward circle of success and opportunity.”
