My easy shrimp fajitas are a one-pan meal that can be ready to serve in just minutes and are loaded with spicy Mexican flavors and tasty veggies. You can add some heat with some cayenne or keep them mild for the entire family. The shrimp, peppers and onions are seasoned perfectly, but you can also add salsa, sour cream or other toppings if you’d like. This dish is one I turn to often when I want something quick, healthy and a crowd-pleaser.
Belle’s Easy Shrimp Fajitas1 pound peeled, uncooked shrimp (rinsed and patted dry)
1 onion, halved and sliced into strips
2 bell peppers (any color), seeded and sliced into strips
2 tablespoons oil
1 teaspoon chili powder
½ teaspoon garlic salt
½ teaspoon paprika
Cayenne pepper (optional — if you want some heat)
Flour tortillas
Heat the oil in a large fry pan over medium-high heat. Fry the onion and peppers until they begin to soften and turn brown. Add the shrimp and cook and stir just until they turn pink. Sprinkle with the spices and toss to mix and coat everything. Serve immediately with warm tortillas.
