BOISE — New dishes and new concession locations will be available at Albertsons Stadium for fans at Boise State football games this fall.
Boise State announced its new food choices for the 2026 season Friday.
“We’re always going to have the classics, it’s just something a little different, let’s put something out there,” said Roland Cruz, Boise State’s Senior Executive Campus Chef. “We have different stands, we have more area that we can sell spaces in, let’s try something new.”
With the newly renovated North End Zone Complex, Boise State now has a 360-degree concourse that it will be taking advantage of. The North End Zone course will feature five food carts, multiple beverage carts and a new draft beer trailer.
Under the South End Zone stands, the new South Fan Depot will replace Bronco Alley on the east side of the stadium, giving fans improved food and drink options. It will be the first time a concession stand has opened underneath the South End Zone stands.
“These new areas have been intentionally created and curated to ease congestion and queue times on the east side of the stadium,” Boise State Sports & Entertainment Group CEO Nathan Burk said in a release. “These concessions will enable us to continue to focus on quality, efficiency, and a decrease in wait time to ensure fans can return to their seats as quickly as possible to enjoy the game. We encourage our fans to take time to explore these new areas and concessions items.”
Among the new food items available, starting with the Sept. 12 home opener against Memphis, are the Fiesta Chicken Bowls, quesabirria tacos, loaded nachos, and new variations on the Bronco Dogs and Bronco Burger.
Boise State will offer smaller hot dogs and burgers, to add a value option to the menu.
“As we were talking to fans, we were really looking for more value options,” Cruz said. “So, we have what we call the Bronco Junior Dog. It’s still Double R Ranch, like all the meats here, still very tasty, just a little bit smaller. ... In addition to the Bronco Value Dog, we have a few value burgers, as well.”
Boise State will also have a few different options with its hot dogs. The Barbeque Bacon Dog will feature onion straws, bacon and barbeque sauce, there will be a chili cheese dog with onions on top and a hot Cheeto dog, featuring cheese sauce covered in crushed hot Cheetos.
The quesabirria tacos will feature slow cooked brisket meat and come with a consommé dipping sauce. The brisket itself cooks for about eight hours on a mass scale before fans even enter the gates.
“We are still using the Double R Ranch brisket and we cook it for a very long time,” Cruz said. “They are made a little more on the fresh side, especially when you’re coming in. One of the biggest things we do when we make these menus, we have to realize that we have 37,000 people coming here. We really have no idea what they’re going to eat, how much of it they’re going to eat. We’re already using the brisket for a number of things, so I really wanted to do something just a bit different with that.”
The Fiesta Chicken Bowls, whose name pays homage to the four Fiesta Bowl games that Boise State has played in and won three times, was a creation that Boise State debuted when Banana Ball came to Albertsons Stadium earlier this summer. It features jasmine rice and chicken tinga covered with roasted corn salsa, pico da gallo, avocado crema and sliced jalapenos. The loaded nachos have tortilla chips, nacho cheese sauce, black beans, taco meat, jalapenos and sour cream.
The loaded nachos, along with the already existing chicken strip and corn dog baskets, will be offered in a new specialty bowl, with orange siding and grooves mimicking stadium seating. On the bottom of the bowl a rendering of the seventh iteration of the Blue Turf, installed this summer, will be shown.
