As a kid, I loved sloppy joes, and I must admit I still think they’re delicious, but I’ve made some changes to my original recipe and combined it with another favorite — the Philly Cheesesteak.

My cheesesteak sloppy joes are full of flavor and a dish both adults and kids will love. You can serve this with hamburger or brioche buns, hoagie or sweet Hawaiian rolls, or even wrapped in a flour tortilla.

The meat mixture can be made in advance and then heated up with the cheese right before serving, making this a great meal during the busy summer days. And when you have a crowd, double it up and it is an easy “serve yourself” dish for potlucks or parties.

Belle’s Cheesesteak Sloppy Joes

1 pound lean ground beef

2 tablespoons butter

1 cup diced onions

1 cup diced green bell pepper

2 cups diced brown mushrooms

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon pepper

1 tablespoon cornstarch

1 cup beef broth

8 slices Provolone Cheese, torn into small pieces

6 hamburger buns, toasted

In a large, heavy fry pan brown the ground beef. Remove the meat from the pan but leave the drippings. To the pan add the butter, onions, bell peppers, and mushrooms. Brown and stir for about 2 minutes.

Add the meat back to the pan. In a small bowl, mix together the cornstarch and broth until smooth, then add the other ingredients mix together. Pour over the ingredients in the pan and cook until most of the liquid is gone (about 5 minutes). Add the cheese and stir until melted. Serve in the toasted hamburger buns.
